This elegant drink combines the natural sweetness of ripe peaches with the smooth aroma of vanilla, elevated by the bubbly of sparkling wine. For this recipe, we suggest using our dry Brut Champagne or Sweet Nancie (if you like your cocktails a bit sweeter).
Ingredients
- 12 oz. fresh or frozen peaches
- 2 tsp. honey
- 1 tsp. Pure vanilla extract or freshly grated ginger
- 1/4 tsp. orange zest (optional)
- 1 (750 mL) bottle sparkling wine, chilled
- 6 sprigs fresh mint, for serving
Instructions
- Place the frozen peaches on a plate and allow them to thaw in the refrigerator for about an hour, or microwave on high for approximately 3 minutes until softened. Once thawed, drain any excess liquid and transfer the peaches to a blender.
- Pour in honey, vanilla or ginger (if using), and orange zest (if desired). Blend the mixture until it becomes smooth and creamy. Taste the puree and add additional honey if you prefer a sweeter flavor.
- Chill the peach puree in the refrigerator for around 30 minutes until thoroughly cooled. When ready to serve, spoon roughly 2 tablespoons of the chilled puree into the bottom of each glass. Top with sparkling wine, garnish with a fresh mint sprig, and enjoy immediately.
