Ingredients

  • 1 ½ ounces agave spirit
  • ½ ounce jalapeño simple syrup
  • 2 ounces fresh grapefruit juice, plus wedges for garnish
  • 2 ounces sparkling water
  • ½ ounce fresh lime juice
  • ¼ ounce agave nectar or simple syrup, or to taste
  • Coarse sea salt, for the rim of the glasses
  • Ice

Instructions

  1. To create the simple syrup, combine 1 cup water, 1 cup sugar, and a jalapeño in a small saucepan. Heat over low heat, until sugar has melted. Set aside for 10 minutes to allow the syrup to cool and infuse. Strain out the jalapeño.
  2. Rim a tall glass with lime juice and Tajin spice.
  3. Add the agave spirit, lime juice, and jalapeño simple syrup to a cocktail shaker with ice.
  4. Shake until frosty, and strain into a serving glass over fresh ice.
  5. Top with grapefruit soda, and garnish with a fresh wedge of lime.
