Little Lake VineyardHerman Farms was established over 165 years ago, with now sixth generation grower Joe Herman at the helm of the farm. Peaches, cherries and grapes comprise this farm, but within the wine industry, Herman Farms stands out as being one of the top vinifera grape growers in Southwest Michigan. The enthusiasm is contagious within the family, and seventh generation Keith Herman recently returned from the corporate world to continue on the family tradition, growing world-class wine grapes!
Grape clusters were harvested, crushed, and destemmed, then fermented in an open-top tank. We then used a technique called saignee to bleed off a portion of the free run juice in order to intensify the fermenter of red wine. The cap of skins and seeds that float to the top of the tank is gently punched down every eight hours to maximize flavor extraction and minimize extraction of harsh tannins. Each and every day during harvest, our winemaker samples the wine in the tanks to evaluate and analyze the progress of fermentation. She is already thinking about which lots will be used for final blends.
