Superb Cocktail Shrimp w/ Ritzy Remoulade

1/2 cup white vinegar
1/2 cup water
1 tablespoon Old Bay seasoning
1 bay leaf
1 teaspoon whole cloves
1 teaspoon whole peppercorns
1 teaspoon salt
1 lemon, sliced
1 pound thawed, raw shrimp, de-veined, large or jumbo, Gulf preferred (Note: Shell-on produces more flavor)


Ritzy Remoulade

1 tablespoon horseradish
2 tablespoons ketchup
1 tablespoon Worcester
1 tablespoon white vinegar
1 tablespoon minced garlic
1/2 red bell pepper
2 green onions, chopped
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 shallot, chopped
2 tablespoon fresh parsley
1 tablespoon Tabasco
2 tablespoon honey
1 tablespoon fresh lemon juice
Salt, to taste


Delicious and easy to prepare Shrimp!


In a large saucepan, combine vinegar, water, seasoning and lemon. Over high heat, bring to a rolling boil. Let simmer for 15 minutes then strain out and discard solids. Return liquid to pan, bring to a boil then add shrimp. Stir gently until shrimp change from translucent to opaque/pink- about 1 to 2 minutes. Remove from heat and drain. To serve warm, place shrimp a large bowl of ice water, briefly then drain. To serve cold, let sit in ice water until completely chilled – about 5 minutes.

Ritzy Remoulade

Place all ingredients in a food processor and pulse until smooth. Salt to taste and refrigerate 1 hour before serving.
