This celebrated young wine boasts fresh cherry, cranberry and raspberry fruit flavors and soft tannins. The palate is beautifully expressive and elegant with subtle spice under the smooth, pure fruit finish.
The 2015 St. Julian Nouveau is made from 3.1 tons of Foch. Whole clusters were hand harvested on September 21st and delivered to the winery. The whole clusters of Foch were placed into a tank and fill with carbon dioxide to remove the presence of oxygen. During this time, the winemaking technique of carbonic maceration was applied. Carbonic maceration is when fermentation occurs inside each berry. The grapes were then pressed on September 29th. After a short period of aging, the wine was bottled the first week of November in order to deliver a fresh, fruity red wine.
