1 cup beer
4 cups Mexican melting cheeses (or Monterey Jack)
2 Jalapeños, diced
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon fresh cilantro, chopped
1/2 teaspoon salt
Black or cayenne pepper, to taste
In medium saucepan, bring beer to boil then reduce heat to low.
Add cheese mixture, 1/2 cup at a time, stirring constantly until all cheese is melted. Do not boil.
Stir in remaining ingredients then pour into a warmed serving bowl.
Option: Before serving, place dip under the broiler to brown the top, giving it a nice crust. Sprinkle with additional jalapenos and cilantro, if desired.
Serve immediately with tortilla chips, or keep warm until use.
