Catherman’s Port-Wine Cheese Spread

1/2 cup Catherman’s Port wine
1/4 cup butter, softened
1 pound extra sharp low fat cheddar cheese, grated
1/2 cup sour cream
6 ounces Neufchatel cheese
1 teaspoon fine sea salt
1/8 teaspoon cayenne powder


In a small bowl, combine wine and butter and set aside. In a food processor, combine cheddar, sour cream, Neufchatel, salt, cayenne powder and horseradish, if using. Process mixture until smooth then, with the processor running, gradually add butter- wine mixture and process until very smooth. Place in an airtight container and refrigerate for at least 48 hours before serving. Flavor fully matures in 3 days. Serve with assorted crackers or celery.
