Spicy, Sweet & Salty what more could you ask for?
1 cup blueberries
1/2 cup cane sugar
1/8 teaspoon fine sea salt
1 whole jalapeño pepper, seeded and diced
1 tablespoon vinegar
1/4 cup fresh lemon juice
1 tablespoon Arrowroot powder (or cornstarch)
8 ounces Neufchatel cheese
16 water crackers
In a saucepan, combine berries, sugar and salt and bring to a boil. Reduce to a simmer and cook for 5 minutes.
Meanwhile, in a food processor combine peppers with vinegar and pulse until desired smoothness.
Add pepper mixture to berries and cook for about 5 minutes. In a small cup, whisk together lemon juice and arrowroot powder until it liquefies then whisk into berry sauce.
Cool slightly before pouring over Neufchatel cheese.
Serve with water crackers.
