Artichoke-infused Spinach Dip

2 cups parmesan cheese
2/3 cup sour cream (or plain yogurt)
1 cup Neufchatel cheese
1 cup mayonnaise (Canola or Olive oil)
2 cloves garlic, minced
10 ounces frozen chopped spinach, thawed and drained
1 (14 ounce) can artichoke hearts, drained and chopped


Preheat oven to 375 degrees. In a food processor, combine Parmesan cheese, sour cream, Neufchatel cheese, mayonnaise and garlic then pulse until smooth.

In an 8-inch square baking pan, combine cheese mixture with spinach and artichoke hearts. Bake for 20-30 minutes or until bubbly.

Serve hot or cold with crackers, toasted bread or baked tortillas.
